American-style crab cakes

SERVES 4 1 Preheat oven to hot, 200°C. 2 RED MAYONNAISE Mix together ¼ cup mayonnaise and 125g romesco sauce. Refrigerat­e until needed.

3 Combine 800g cooked crabmeat,crabmeat 4 eggs,eggs 60g mayonnaise, 1 cup chopped parsley leaves, 1 tbsp Dijon mustard, 6 sliced green onions, 300g crumbled water crackers, zest and juice 1 lemon, and a pinch cayenne pepper in a bowl and divide the mixture into even-sized patties. 4 Dust in flour, then shallowfry them in a frying pan in 2 tbsp clarified butter or oil over medium heat for 3 mins on each side until golden brown. Drain. Serve with lemon wedges and red mayonnaise to dip.
