KUMARA TORTILLA WITH RICOTTA HARISSA

SERVES 4 PREP 5 MINS COOK 40 MINS COST $$$$$

F ¼ cup olive oil F 1 medium white onion, thinly sliced F 300g kumara, peeled, thinly sliced F 12 free-range eggs, lightly beaten F 250g ricotta F 2 tbsp coarsely chopped natural almonds F 1 tbsp harissa paste F 1 tbsp sunflower seeds F ¼ cup coriander leaves 1 Heat 1 tbsp oil in a 20 x 25cm ovenproof frying pan on medium. Add onion and kumara. Carefully stir to coat in oil. Season. Reduce heat to medium. Cook, covered, 20 mins or until tender. 2 Preheat a grill to high. 3 Transfer kumara mixture to a large bowl. Add egg. Stir well to coat. Heat 1 tbsp oil in same pan over medium heat and add egg mixture. Reduce heat to low. Cook 10 mins or until tortilla is partially set. Place under grill. Cook 5 mins or until golden and cooked through. Set aside 5 mins.

4 Serve tortilla topped with ricotta, almonds, harissa, sunflower seeds and coriander. Drizzle with remaining oil.
