STIR-FRIED BEEF & GAI LAN

SERVES 4 PREP 10 MINS COOK 20 MINS PER SERVE 2857kj

4 cups water, plus ¼ cup extra 2 cups white long-grain rice ¼ cup vegetable oil 500g round steak, sliced 5cm ginger, peeled, sliced 2 garlic cloves, crushed 2 bunches gai lan, 3cm pieces 250g shiitake mushrooms 2 tbsp soy sauce 2 tbsp Chinese cooking wine 2 tsp cornflour 1 tsp sesame oil chopped nuts, to serve 1 In a saucepan, combine water and rice. Boil 10 mins. Set aside, covered, 10 mins.

2 Meanwhile, in a wok, heat oil on high. Stir-fry steak in 2 batches, 1-2 mins each. Set aside.

3 In same wok, stir-fry ginger and garlic 30 secs. Add gai lan stems and mushrooms. Stir-fry 2 mins.

4 In a jug, whisk extra water, soy, wine and cornflour. Add to wok, stir-fry until boiling. Simmer, 2 mins.

5 Return steak to wok with gai lan leaves. Stir-fry 1-2 mins.

6 Drizzle with sesame oil and scatter with nuts. Serve with rice.
