COUSCOUS PORK SCHNITZEL WITH COLESLAW SALAD

400g uncrumbed pork schnitzel 2 eggs ¾ cup couscous 500g packet rainbow coleslaw 2 tbsp lemon juice

If pork is a little thick, cover with plastic wrap and pound lightly to an even thickness.

In a shallow dish, whisk eggs and place couscous on a piece of baking paper. Coat pork by dipping into egg and then pressing into couscous. Place on a lined tray and chill.

In a large frying pan, heat enough olive oil for shallow frying on medium. Cook the pork 2-3 mins each side until golden and cooked through. Drain on paper towel.

In a bowl, combine slaw and juice. Season and toss to combine.
