Who inspired your love of cooking?

My parents were my inspiration – they ran pubs in and around London for close to 40 years. My dad had a passion for the more unusual cuts of meat such as liver, kidney, oxtail and osso bucco. My mum worked tirelessly in the kitchen and has been a driving factor for me to be where I am now.

Describe your home kitchen...

Mine has a lot of natural light pouring in, which helps with recipe inspiration. I like to spread out when I cook so I have a lot of free bench space. This minimalism helps make cooking simple.

What’s always in your fridge?

There are a few items on this list but you’ll always find butter or ghee – both make the world go round.

Do you have a favourite cooking appliance?

I use a Whirlpool induction cooktop, which is fast and efficient.

What gadget couldn’t you live without?

Hands down my Kitchenaid blender. It gets used a few times a day either for salsa verde or smoothies.

How important is healthy eating to you?

For me, I want to be as healthy as I can be for as long as possible, and nutrition has the biggest influence on your health.

What do you love cooking at home?

I love organ meat or cuts of meat that require slow cooking.

What do you make if time is tight?

I try to get vegies into every meal so when I’m pushed for time I’ll whip up an omelette with onion, garlic, leeks and spinach... oh, and butter!
