BEEF PATTY SCHNITZEL WITH MASH & GRAVY

750g beef mince ½ cup sage and onion stuffing mix 75g cheddar cheese, cut into 4 cubes ½ cup plain flour 2 eggs, whisked 60g packet potato crisps, crushed ¾ cup fresh breadcrumb­s ¼ cup white sesame seeds oil, for shallow frying gravy, steamed broccolini, to serve

CREAMY POTATO MASH

1kg desiree potatoes 4 garlic cloves, sliced cup pouring cream 40g butter

In a bowl, combine mince and stuffing mix. Divide into 4 equal portions. Form each into an oval shape. Make an indent in centre of each and push in a cheese cube.

Lightly coat each patty in flour. Dip into egg, then press into combined crisps, crumbs and sesame seeds to coat. Place on a tray and chill 20 mins.

3 CREAMY POTATO MASH

Meanwhile, in a large saucepan of boiling salted water, cook potatoes and garlic 10 mins. Drain, return to saucepan and mash with cream and butter until smooth. Season, keep warm.

In a large frying pan, heat oil on high. Cook schnitzels 4-5 mins each side until golden and cooked. Drain on paper towel. Serve with mash, gravy and broccolini.
