PEANUT BUTTER CHOC-CHUNK COOKIES

125g unsalted butter, softened 1 cup brown sugar 1 tsp vanilla extract ¼ cup smooth peanut butter 1 egg ¾ cup plain flour ¼ cup self-raising flour 200g dark chocolate, chopped ½ cup roasted unsalted peanuts, chopped 225g dark chocolate melts, melted

SALTED PEANUT PRALINE

¾ cup caster sugar ¼ cup water ½ cup unsalted peanuts ½ tsp sea salt flakes

Preheat oven to moderate, 180°C. Line 2 oven trays with baking paper.

In a bowl, use an electric mixer to beat butter, sugar and vanilla together until creamy. Add peanut butter and egg, beating well.

Sift flours together over mixture and combine. Mix in chopped chocolate chunks.

Dollop a tbsp of dough onto trays about 5cm apart and flatten slightly.

Bake 12-15 mins until golden brown. Allow to cool on trays 5 mins. Move to a wire rack.

6 SALTED PEANUT PRALINE

Line an oven tray with baking paper. In a saucepan, stir sugar and water on low until sugar dissolves. Increase heat to high. Boil 6-7 mins until golden. Quickly stir in peanuts. Pour onto tray and sprinkle with salt. Set aside 30 mins until firm. In a food processor, pulse salted peanut praline to fine crumbs (see tip).

Dip cookies in melted chocolate. Sprinkle with praline. Set aside to set.
