TERIYAKI TURKEY STIR-FRY SERVES 4 PREP 10 MINS + MARINATING COOK 10 MINS PER SERVE 865kj 500g turkey breasts, sliced ¼ cup soy sauce ¼ cup sherry 2 tsp grated ginger 2 garlic cloves, crushed 1 onion, sliced 4 green onions, sliced diagonally 1 bunch choy sum, trimmed, sliced steamed rice, sliced red chilli, to serve In a large bowl, combine turkey with soy, sherry, ginger and garlic, tossing well. Marinate for at least 20 mins (place in the fridge if you’re marinating longer).

In a wok or large frying pan, heat oil on high. Drain turkey, reserving marinade. Stir-fry in two batches 2-3 mins each until browned. Set aside.

In same wok, stir-fry onion and green onion 1-2 mins. Return turkey to wok with choy sum and reserved marinade.

Stir-fry 1-2 mins until hot and choy sum is wilted. Serve on a bed of rice, sprinkled with sliced red chilli.
