JOHN DORY STEW
SERVES 2-4 PREP 15 MINS COOK 15 MINS
1 tbsp butter 1 red onion, peeled, finely chopped 2 garlic cloves, finely chopped 1 long red chilli, seeded, finely chopped 1 bunch parsley, stalks finely chopped 1/3 cup chicken or fish stock 250g punnet cherry tomatoes 400g can tomatoes ½ cup passata handful pitted kalamata olives 1 tbsp chopped capers 6 anchovy fillets, chopped 2 John Dory fillets
In a frying pan or saucepan, heat butter on medium. Add onion, garlic, chilli and parsley stalks and saute until softened.
Add stock, tomatoes, cherry tomatoes, passata, olives, capers and anchovies. Season.
Cook 5 mins to allow flavours to blend and sauce to thicken.
Reduce heat to simmer and add fish fillets. Cook 3-5 mins until fish is cooked through.
