BANANA BREAD

MAKES 8 PREP 10 MINS COOK 20 MINS

4 bananas 4 eggs 4 tbsp butter ½ cup sweet potato or coconut flour 2 tbsp nut butter or tahini 1 tsp cinnamon 1 tsp vanilla extract 1 tsp baking soda pinch Himalayan salt chia seeds or chopped walnuts, to sprinkle

1 Preheat oven to moderate, 180°C. Lightly grease 8 recesses of a muffin pan with coconut oil or butter (or a 10 x 20cm loaf pan).

2 In a large mixing bowl, mash bananas thoroughly with a fork. Add remaining ingredient­s and combine.

3 Pour mixture between recesses and top with chia seeds or walnuts.

4 Bake 15-20 mins (45 mins if baking larger loaf) until golden brown. Remove from oven and insert a skewer to make sure they cooked through (skewer will come out clean).

5 Pop out of pan and allow to cool on a cooling rack for 15 mins. Top with icing, if liked.
