STEAK WITH CHILLI JAM

SERVES 4 PREP 10 MINS COOK 30 MINS PER SERVE 1785kj

6 long red chillies, chopped 1 red capsicum, seeded, chopped 4 garlic cloves, sliced 4 eschalot, chopped 1/ cup peanut oil 3 3/ cup brown sugar 4 2 tbsp tamarind puree 1kg sirloin steak, cut into 6 4 kaffir lime leaves, finely chopped 3 tsp fish sauce fries, green salad, to serve

1 In a food processor, pulse chilli, capsicum, garlic, eschalot and ¼ cup oil until a paste forms.

2 Heat a medium saucepan on medium. Add chilli paste and cook stirring occasional­ly, 10 mins. Stir in sugar and tamarind. Simmer 10 mins, stirring occasional­ly, until it reaches jam-like consistenc­y. Stir kaffir lime and fish sauce through.

3 Preheat a chargrill plate on high. Spread 1 tbsp jam on each side of steaks. Cook 4-5 mins each side until grill lines appear and cooked to taste. Set aside two steaks and half of the remaining chilli jam for lunch.

4 Serve steaks with remaining chilli jam, fries and a green salad.
