FRYING PAN BEEF & SPINACH LASAGNE

SERVES 6 PREP 15 MINS + RESTING COOK 15 MINS COST $$$$$

1 tbsp olive oil

1 large onion, finely chopped

2 garlic cloves, crushed

375g packet fresh lasagne sheets

60g baby spinach leaves

750g bottle bolognese pasta sauce

1 cup water

1 ½ cups firm ricotta, crumbled

1 ½ cups grated pizza cheese

1/3 cup small basil leaves

1 Heat oil in a large, deep frying pan over medium-high heat. Cook onion and garlic, stirring, 5 mins until onion softens.

2 Meanwhile, tear lasagne sheets lengthways into strips. Put long strips aside, save any small broken pieces. Add small broken pasta pieces and spinach to pan with onion and stir gently to combine. Pour combined pasta sauce and water into pan. Mix gently to combine.

3 Place long pasta strips, standing upright on long sides, in the mixture. Sprinkle with both cheeses. Bring pasta mixture to boil over high heat. Reduce heat to low. Simmer 2 mins until pasta is tender. 4 Preheat grill. 5 Grill lasagne for 5 mins until cheese browns. Cover and stand 5 mins before serving. Top with basil.
