NICOISE PASTA SALAD

SERVES 4 PREP 25 MINS COOK 15 MINS PER SERVE 2947kj

375g small pasta shells 420g can tuna in chilli oil, drained, oil reserved 200g green beans, trimmed, blanched 250g punnet cherry tomatoes, halved 60g bag baby spinach leaves ½ cup pitted kalamata olives 1 cup parsley leaves 2 tbsp lemon juice 1 garlic clove, crushed toasted baguette slices, to serve

1 In a large saucepan of boiling salted water, cook pasta following packet instructio­ns. Drain. Set aside. Cool.

2 In a large bowl, toss pasta, tuna, beans, tomato, spinach, olives and parsley.

3 In a small jug, whisk reserved tuna oil, lemon juice and garlic together. Toss through the pasta salad. Season to taste. Serve with toasted baguette.
