BEEF & CAB­BAGE RICE BOWL

SERVES 4 PREP 10 MINS COOK 25 MINS PER SERVE 3034kj

2 tbsp veg­etable oil 500g minced beef 3 gar­lic cloves, crushed 1 tbsp sesame oil 2 cups shred­ded cab­bage ½ cup brown sugar ¼ cup soy sauce 1 ½ tbsp grated fresh gin­ger ¼ tsp chilli flakes 1 car­rot, shred­ded 1 zuc­chini, shred­ded 4 eggs 450g packet mi­crowave brown rice shred­ded green onion, toasted sesame seeds, hot chilli sauce, to serve

1 In large fry­ing pan, heat half oil on high. Cook mince 2-3 mins un­til brown. Add gar­lic and sesame oil. Cook 1 min.

2 Mix in cab­bage, brown sugar, soy sauce, gin­ger and chilli flakes. Sea­son to taste. Sim­mer, stir­ring, 2-3 mins un­til just wilted. Stir in car­rot and zuc­chini. Cook 1 min.

3 Mean­while, heat re­main­ing oil in fry­ing pan on high. Fry eggs un­til cooked to taste.

4 Cook rice fol­low­ing packet in­struc­tions. Serve rice topped with mince mix­ture, fried egg, onion, sesame seeds and chilli sauce.
