CHICKEN, PUMPKIN & RICE SALAD

250g microwave brown rice and quinoa

2 tbsp extra virgin olive oil

1 tbsp lemon juice

reserved sliced chicken, pumpkin, broad beans from dinner

60g packet baby spinach leaves

crumbled feta, lemon wedges, to serve

1 Cook rice following packet instructio­ns. 2 In a jug, combine oil and lemon juice. Season. 3 In a bowl, combine rice with sliced chicken, pumpkin, broad beans and spinach. Toss with dressing. Season. Sprinkle with crumbled feta, if liked. Accompany with lemon wedges.
