PASTA CARBONARA WITH TURKEY

375g 375 fettuccine f i

2 tsp olive oil

400g fresh turkey breast, cubed

2 rashers lean shortcut bacon, chopped

1 onion, finely chopped

250g mushrooms, sliced

4 garlic cloves, crushed

375g can light and creamy evaporated milk

2 eggs, whisked

¹/³ cup grated parmesan

¹/³ cup chopped parsley, plus extra to serve

1 In I a large l saucepan of fb boiling ili salted ld water, cook pasta following packet instructio­ns until al dente.

2 Meanwhile, in large frying pan, heat oil on high. Cook turkey and bacon 3-4 mins, stirring, until turkey is well browned.

3 Reduce heat to medium. Add onion, mushrooms and garlic and cook 3-4 mins until onion softens. Pour in milk and bring to simmer. Cook 2-3 mins until slightly thickened.

4 Drain pasta and return to pan. Add turkey sauce with eggs, parmesan and parsley. Toss well and season to taste. Serve straight away sprinkled with extra parsley.
