PASTA CARBONARA WITH TURKEY

375g 375 fet­tuc­cine f i

2 tsp olive oil

400g fresh turkey breast, cubed

2 rash­ers lean short­cut ba­con, chopped

1 onion, finely chopped

250g mush­rooms, sliced

4 garlic cloves, crushed

375g can light and creamy evap­o­rated milk

2 eggs, whisked

¹/³ cup grated parme­san

¹/³ cup chopped pars­ley, plus ex­tra to serve

1 In I a large l saucepan of fb boil­ing ili salted ld wa­ter, cook pasta fol­low­ing packet in­struc­tions un­til al dente.

2 Mean­while, in large fry­ing pan, heat oil on high. Cook turkey and ba­con 3-4 mins, stir­ring, un­til turkey is well browned.

3 Re­duce heat to medium. Add onion, mush­rooms and garlic and cook 3-4 mins un­til onion soft­ens. Pour in milk and bring to sim­mer. Cook 2-3 mins un­til slightly thick­ened.

4 Drain pasta and re­turn to pan. Add turkey sauce with eggs, parme­san and pars­ley. Toss well and sea­son to taste. Serve straight away sprin­kled with ex­tra pars­ley.
