1 small onion, finely chopped

1 garlic clove, finely chopped

4 eggs

¹/³ cup self-rais­ing flour

1 ½ cups low-fat milk

100g low-fat ham slices, chopped

¾ cup re­duced-fat shred­ded tasty cheese

5 fat-free sun-dried toma­toes, halved

1 tbsp chopped chives

salad leaves, to serve

1 Pre­heat oven to hot, 200°C. Place an oven tray in the oven to pre­heat. Lightly grease a 22cm 5-cup pie dish.

2 Lightly spray a fry­ing pan with oil and place on medium heat. Cook onion 3-4 mins un­til ten­der. Add garlic and cook 1 min. Cool.

3 In a large jug, whisk eggs and flour to­gether. Grad­u­ally whisk in milk. Sea­son to taste.

4 Spread cooled onion mix­ture, half ham and half cheese over base of dish. Pour over egg mix­ture. Scat­ter over re­main­ing ham, cheese, toma­toes and chives.

5 Bake 25-30 mins un­til just set and golden. Cool in dish 5 mins. Serve in wedges with salad leaves.
