CRUSTLESS QUICHE LORRAINE
SERVES 6-8 PREP 20 MINS COOK 30 MINS PER SERVE 629kj COST $
1 small onion, finely chopped
1 garlic clove, finely chopped
4 eggs
¹/³ cup self-raising flour
1 ½ cups low-fat milk
100g low-fat ham slices, chopped
¾ cup reduced-fat shredded tasty cheese
5 fat-free sun-dried tomatoes, halved
1 tbsp chopped chives
salad leaves, to serve
1 Preheat oven to hot, 200°C. Place an oven tray in the oven to preheat. Lightly grease a 22cm 5-cup pie dish.
2 Lightly spray a frying pan with oil and place on medium heat. Cook onion 3-4 mins until tender. Add garlic and cook 1 min. Cool.
3 In a large jug, whisk eggs and flour together. Gradually whisk in milk. Season to taste.
4 Spread cooled onion mixture, half ham and half cheese over base of dish. Pour over egg mixture. Scatter over remaining ham, cheese, tomatoes and chives.
5 Bake 25-30 mins until just set and golden. Cool in dish 5 mins. Serve in wedges with salad leaves.
