Beat 125g butter and ½ cup caster sugar together in a bowl until creamy. Beat in 2 eggs and 1 tsp vanilla. Fold in 2 ½ cups self-raising flour.
Knead lightly on a floured surface. Wrap and chill 30 mins.
Roll out between 2 sheets baking paper. Cut out desired shapes. Place 2cm apart on a lined oven tray. Sprinkle with sugar. Bake, 180°C, 10 mins.
