NACHOS SALAD
SERVES 4 PREP 20 MINS + RESTING COOK 10 MINS PER SERVE 3240kj COST $$$$$
2 x 250g porterhouse steaks 1 tbsp taco seasoning mix (see tip) 2 baby cos lettuce, torn 1 Lebanese cucumber, thinly sliced on mandolin 400g red kidney beans, rinsed, drained 1 small red onion, thinly sliced 200g baby heirloom tomatoes, halved 1 avocado, seeded, chopped ½ bunch coriander, leaves picked corn chips, sour cream, hot chilli sauce, to serve
DRESSING
⅓ cup extra-virgin olive oil 2 tbsp lime juice 1 garlic clove, crushed 2 tsp taco seasoning mix
1 Preheat a chargrill pan on high. Rub steaks with taco seasoning. Cook 2-3 mins each side until cooked to taste. Set aside, loosely covered with foil, 5 mins to rest. 2 DRESSING In a jug, whisk all ingredients together. Season.
3 On a serving platter, layer lettuce, cucumber, beans, onion, tomato and avocado. Slice steak and toss through salad.
4 Drizzle with dressing and sprinkle with coriander. Serve with corn chips, sour cream and chilli sauce.
