-

Nutrition Nt iti expert t MELISSA KAYSER shares her tips for adding some of our r country’s native bounty to your plate te

FINGER LIMES

The unique bead-like cells of the zesty fruit (main picture) make a stunning decorative addition to savoury dishes like sushi and sweet treats such as cheesecake.

KAKADU PLUMS

Their acidity not only makes them great for pickling but also for adding to a sauce, or simply eaten raw to quench your thirst.

WATTLESEED WAT

Roast the seeds and use them like coffee beans to add a hazelnut flavour to desserts such as pancakes and tiramisu.

WARRIGAL GREENS

Use the leaves as a filling in pies, as a base for salads. Older leaves should be blanched for 1-2 mins or boiled before use in recipes.

LEMON ASPEN

Try instead of lemons to make delicious jams, fruit curds, dessert sauces and tarts. The flavour is very strong so you don’t need a lot.
