LAMB & TOMATO STIR-FRY

SERVES 4 PREP 15 MINS COOK 15 MINS PER SERVE 1545kj 2 tbsp vegetable oil 350g lamb leg steaks, sliced 1 red onion, wedges 2 garlic cloves, crushed 1 tbsp grated fresh ginger 1 red capsicum, seeded, sliced 1 bunch broccolini, sliced 4 tomatoes, chunks steamed rice, to serve

SAUCE

¼ cup soy sauce ¼ cup white vinegar 2 tbsp fish sauce 2 tbsp brown sugar 2 tsp cornflour 1 In a wok, heat half oil on high. 2 Stir-fry lamb, in 2 batches, 2-3 mins each until browned. Remove from wok.

3 In same cleaned wok, heat remaining oil on high. Stir-fry onion, garlic and ginger 1 min. Add capsicum and broccolini and stir-fry 1-2 mins. Mix in tomato and stir-fry 1-2 mins more.

4 SAUCE Stir ingredient­s together. 5 Return lamb to wok with sauce. Heat until sauce boils. Serve with rice.
