PASSIONFRUIT MERINGUE KISSES
MAKES 12 PREP 10 MINS COOK 1 HOUR Preheat oven to slow, 120°C. Line 2 oven trays with baking paper. In a small bowl, using an electric mixer, beat 2 egg whites and ½ cup caster sugar 4-5 mins until sugar dissolves. Fold in 1 tsp each strained passionfruit juice and cornflour. Spoon into a piping bag fitted with 2cm fluted nozzle. Pipe 4cm stars onto trays 2cm apart. Bake 1 hour. Cool on trays. FILLING Meanwhile, in a small bowl, beat 60g softened unsalted butter and ¾ cup icing sugar together in a small bowl until pale and creamy. Stir in 1 tbsp passionfruit pulp. Sandwich meringues with passionfruit butter. Serve dusted with icing sugar.
