PRAWN SATAY SALAD
SERVES 4 PREP 25 MINS + CHILLING COOK 5 MINS PER SERVE 1604kj COST $$$$$ 1 cup shredded wombok
1 red capsicum, seeded, sliced 1 carrot, julienned
100g snow peas, trimmed, sliced
½ cup Thai basil leaves
4 green onions, sliced
16 medium green prawns, peeled, deveined, tails
DRESSING
½ cup crunchy peanut butter ¼ cup light soy sauce 1 tbsp brown sugar
1 tsp sesame oil
1⁄ cup lime juice 3
1 In a bowl, combine vegetables, basil and onion. Set aside.
2 DRESSING In a small bowl, whisk peanut butter, soy, sugar and sesame oil together until smooth. Reserve 2 tbsp. Whisk juice into remaining dressing.
3 In a bowl, toss prawns with reserved dressing until well coated. Chill 15 mins.
4 Heat a wok or large frying pan on high. Spray with oil. Stir-fry prawns with dressing, 3-4 mins until cooked through.
5 Serve salad topped with prawns and drizzled with dressing.
