CURRIED TURKEY & PEACH SALAD

500g turkey breast steaks
1 tbsp vegetable oil
1 tbsp garam masala
4 paddadams
4 yellow peaches, stoned, sliced
1 avocado, seeded, sliced
1 red onion, thinly sliced
1 bunch coriander, leaves picked
1 long red chilli, seeded, sliced juice
1 lime, plus wedges to serve 1 In a bowl, combine turkey, oil and garam masala, turning to coat turkey well.
2 Heat a large frying pan on medium. Cook turkey 5-7 mins each side until cooked through. Transfer to a plate. Rest, loosely covered with foil, 5 mins.
3 Meanwhile, microwave pappadams on High (100%) 45 secs until puffed and crisp.
4 On a large platter, combine peaches, avocado, onion, coriander and chilli. Drizzle with juice, season and toss gently.
5 Slice turkey and arrange over salad. Serve with pappadams and lime wedges.
