How to beat perfect egg whites
1 Use room-temperature eggs and break into a clean dry bowl, reserving yolks for a later use. Using an electric mixer, beat whites until soft peaks form.
2 Add caster sugar gradually (1 tbsp at a time), beating well until sugar is dissolved and foam is stiff, thick and glossy.
