PERSIAN PUMPKIN SALAD AD

SERVES 8 PREP 15 MINS COOK 25 MINS

Preheat grill to high and oven to hot, 200°C. Grill 2 quartered, seeded capsicum 10 mins. Cool, covered. Peel and slice. Slice half 1kg pumpkin. Toss on oven tray with 1 tbsp olive oil and 1 tsp cumin. Bake 25 mins. Pulse remaining pumpkin in a food processor until chopped. Saute pumpkin, 5 mins. Combine pumpkin with ½ bunch coriander and mint, ½ cup chopped pistachios and 2 tbsp dukkah. Serve with lemon.
