CHRISTMAS PUDDING SLICE

1 cup raisins 1 cup coarsely chopped dried dates ½ cup boiling water 1 tsp bicarbonat­e of soda 90g butter, softened 1 cup brown sugar 1 egg 1 cup self-raising flour ½ cup plain flour ½ cup brandy or dry sherry

cup chopped pistachios 50g Violet Crumble, chopped TOPPING 100g milk chocolate, melted 50g Violet Crumble, chopped ¼ cup chopped pistachios cup chopped craisins cup quartered glace cherries 1 tsp each gold, silver cachous

Preheat oven to moderate, 180°C. Lightly grease and line a 20 x 30cm slice pan.

In a heatproof bowl, combine raisins, dates, water and soda. Set aside 10 mins.

In a bowl, using an electric electricc mixer, beat butter and sugar together until pale and creamy. Add egg, beating well. Fold in sifted combined combinedd flours, date mixture, brandy, nuts and Violet Crumble.

Spoon mixture evenly into pan. Bake 25-30 mins until cooked when tested.

When ready to serve, drizzle chocolate over pudding and sprinkle with remaining ingredient­s and cachous.
