DIY GRANOLA BOARD
SERVES 8 PREP 15 MINS COOK 30 MINS
In a large saucepan, combine 3 cups water, 1 cup honey, ¼ cup lemon juice and 1 split, scraped vanilla bean. Bring to boil on high. Reduce to low. Add 4 yellow peaches, halved. Simmer, covered, 15 mins. Cool in liquid. GRANOLA On a lined oven tray, toss 2 cups rolled oats, ¼ cup brown sugar and 1 tsp mixed spice with 1/ cup honey and 2 tbsp 3 canola oil. Bake 180°C 15 mins. Transfer to tray, bake 15 mins, stirring once. Stir in 1 cup mixed chopped nuts and ½ cup sliced dried figs. Bake 5 mins. Mix in ¼ cup craisins. Cool. FROZEN MANGO WHIP In a food processor, pulse 2 cups frozen mango with 2 tbsp lime juice until smooth. Serve with peaches, granola, yoghurt and fresh mixed berries.
