TORTILLA BEEF PIES
SERVES 4 PREP 15 MINS COOK 50 MINS PER SERVE 1815kj
4 large burrito tortillas 1 tbsp extra-virgin olive oil 1 brown onion, finely chopped 400g beef mince 1 x 35g sachet chilli spice mix ¾ cup water 420g canned four-bean mix, drained, rinsed 1 egg, lightly whisked ½ cup grated tasty cheese salsa, sour cream, coriander leaves to serve
1 Preheat oven to moderate, 180°C. Lightly grease 4 x 13cm base (18cm top) shallow pie dishes.
2 Lightly spray tortillas with oil and press into pans. Bake 10 mins until golden and crisp.
3 In a frying pan, heat oil on high. Saute onion 2-3 mins until tender. Add mince and brown well for 5 mins, breaking up with a spoon as it cooks.
4 Stir in chilli mix and water. Simmer 5 mins, stirring occasionally, until cooked through. Stir in beans. Remove from heat. Allow to cool, stir through egg.
5 Spoon mixture into prepared cases, smoothing top. Sprinkle over cheese. Bake for 15-20 mins until mince is heated through and cheese has melted. Serve with salsa, grated parmesan, coriander leaves and sour cream.
