AVOCADO CHOCOLATE MOUSSE
SERVES 6 PREP 15 MINS COOK 5 MINS 100g dark chocolate (or raw dark chocolate, see tip), broken
400g avocado flesh (2-3 avocados)
½ cup coconut cream
3 ½ tbsp pure maple syrup
⅓ cup raw cacao powder (or regular cocoa powder) berries, whipped cream, to serve
1 In a heavy-based saucepan on the stovetop, or a microwave-proof bowl in the microwave, gently melt chocolate, stirring occasionally, until melted and smooth. Set aside to cool slightly.
2 Scoop avocado into a food processor or high-powered blender. Add coconut cream, syrup and cacao and process until almost smooth, scraping down sides with a spatula.
3 Add melted chocolate and process until smooth and creamy, scraping down sides. Spoon into serving glasses.
4 Serve with berries and cream.
