MAR­BLE CUP­CAKES WITH NUTELLA & STRAW­BER­RIES

Pre­heat oven to moder­ate, 180°C. Grease a 6-hole Texas muf­fin pan. In a large bowl, beat 125g soft­ened un­salted but­ter and 2⁄3 cup caster sugar un­til creamy. Beat in 1 tsp vanilla. Add 2 eggs, beat­ing well af­ter each. Fold in 1 ¾ cup self-rais­ing flour with 2⁄3 cup milk. Di­vide mix­ture between three bowls. Stir 1 ½ tbsp co­coa into one bowl and a few drops red food colour­ing into an­other. Stir 1 tbsp milk into co­coa bat­ter. Dol­lop mix­tures al­ter­nately into holes. Us­ing a skewer, swirl through mix­ture twice. Bake 20-25 mins un­til cooked. Cool in pan 5 mins. Trans­fer to a wire rack to cool com­pletely. TOP­PING In a bowl, us­ing an electric mixer, beat 300ml thick­ened cream and 1 tsp vanilla un­til soft peaks form. Dol­lop ½ cup Nutella between cup­cakes and top with cream. Serve with straw­ber­ries.
