BEEF & NOODLE SALAD
SERVES 4 PREP 15 MINS COOK 5 MINS PER SERVE 1683kj 200g dried rice stick noodles 2 tsp vegetable or peanut oil 400g beef mince 2 tbsp lime juice, plus wedges to serve 2 tbsp sweet chilli sauce 2 tsp fish sauce 2 tsp sesame oil 1 cup basil leaves 1 cup coriander leaves 2 tomatoes, cut into wedges 1 red onion, halved, thin wedges
1 In a large heatproof bowl, soak rice stick noodles in boiling water 5 mins. Stir to separate strands. Drain. Rinse under cold water, drain again. Set noodles aside.
2 Meanwhile, in a medium frying pan, heat oil on high. Cook mince, stirring to break up any lumps, 5 mins or until browned.
3 In a jug, whisk lime juice, sweet chilli sauce, fish sauce and sesame oil. Toss mince, herbs, tomato, onion and dressing with noodles. Serve with lime wedges.
