BEEF & NOO­DLE SALAD

SERVES 4 PREP 15 MINS COOK 5 MINS PER SERVE 1683kj 200g dried rice stick noo­dles 2 tsp veg­etable or peanut oil 400g beef mince 2 tbsp lime juice, plus wedges to serve 2 tbsp sweet chilli sauce 2 tsp fish sauce 2 tsp se­same oil 1 cup basil leaves 1 cup co­rian­der leaves 2 toma­toes, cut into wedges 1 red onion, halved, thin wedges

1 In a large heat­proof bowl, soak rice stick noo­dles in boil­ing water 5 mins. Stir to sep­a­rate strands. Drain. Rinse un­der cold water, drain again. Set noo­dles aside.

2 Mean­while, in a medium fry­ing pan, heat oil on high. Cook mince, stir­ring to break up any lumps, 5 mins or un­til browned.

3 In a jug, whisk lime juice, sweet chilli sauce, fish sauce and se­same oil. Toss mince, herbs, tomato, onion and dress­ing with noo­dles. Serve with lime wedges.
