MAPLE PORK WITH NECTARINE SALAD

SERVES 4 PREP 10 MINS COOK 10 MINS PER SERVE 2082kj ¼ cup maple syrup, plus extra to driz­zle 1 gar­lic clove, crushed 4 x 220g pork loin cut­lets 2 nec­tarines, cut into wedges 120g packet mesclun salad 400g can but­ter beans, drained, rinsed

cup wal­nuts, toasted 2 tbsp white bal­samic 2 tsp olive oil 60g Dan­ish feta, crum­bled

1 Pre­heat char­grill on high. In a small bowl, com­bine maple syrup and gar­lic. Char­grill pork 5 mins each side, brush­ing with maple mix­ture. Set aside.

2 Mean­while, in a bowl, com­bine nec­tarines, mesclun, but­ter beans, wal­nuts, bal­samic and oil. Sea­son to taste.

3 Serve pork and salad driz­zled with crum­bled feta and extra maple syrup.
