MAPLE PORK WITH NECTARINE SALAD
SERVES 4 PREP 10 MINS COOK 10 MINS PER SERVE 2082kj ¼ cup maple syrup, plus extra to drizzle 1 garlic clove, crushed 4 x 220g pork loin cutlets 2 nectarines, cut into wedges 120g packet mesclun salad 400g can butter beans, drained, rinsed
cup walnuts, toasted 2 tbsp white balsamic 2 tsp olive oil 60g Danish feta, crumbled
1 Preheat chargrill on high. In a small bowl, combine maple syrup and garlic. Chargrill pork 5 mins each side, brushing with maple mixture. Set aside.
2 Meanwhile, in a bowl, combine nectarines, mesclun, butter beans, walnuts, balsamic and oil. Season to taste.
3 Serve pork and salad drizzled with crumbled feta and extra maple syrup.
