CHURCHILL re­veals his quick and easy lemon whipped ri­cotta recipe In a bowl, com­bine 1 pun­net halved sweet Ku­mato toma­toes with ½ cup lemon juice, pinch salt and 1 tbsp olive oil. Al­low to sit for at least 20 mins. Whisk 2 cups ri­cotta in a bowl un­til light and fluffy. Fold through an­other ½ cup lemon juice and zest 3 lemons and set aside. Mix 3 chopped sprigs dill, 2 tsp honey, 4 tbsp olive oil and pinch salt. To serve, spread lemon ri­cotta onto plate or board. Top with toma­toes. Spoon over dill oil. Fin­ish with sliced ap­ple, rocket and basil.
