CHURCHILL reveals his quick and easy lemon whipped ricotta recipe In a bowl, combine 1 punnet halved sweet Kumato tomatoes with ½ cup lemon juice, pinch salt and 1 tbsp olive oil. Allow to sit for at least 20 mins. Whisk 2 cups ricotta in a bowl until light and fluffy. Fold through another ½ cup lemon juice and zest 3 lemons and set aside. Mix 3 chopped sprigs dill, 2 tsp honey, 4 tbsp olive oil and pinch salt. To serve, spread lemon ricotta onto plate or board. Top with tomatoes. Spoon over dill oil. Finish with sliced apple, rocket and basil.
