TV foodie SILVIA COLLOCA chats to Woman’s Day about how she cooks at home

Actress, cookbook author, food blogger, television host – it seems there’s nothing this talented Italian can’t do! We asked Silvia Colloca to tell us about her kitchen at home...

Who inspired your love of cooking?

My mother, my nonna and all the Abruzzese people in my life continue to inspire me in the kitchen.

How would you describe your kitchen?

Very simple and unrenovate­d, but highly functional. I don’t have any kitchen appliances out expect for my food processor and a stick blender.

What items would we always find in your fridge at home?

Parmigiano, eggs, ricotta and leftover Mutti Passata – all ready to create something delicious.

What are your pantry essentials?

Mutti Polpa Finely Chopped Tomatoes, beans and chickpeas, extra-virgin olive oil and anchovies.

And your favourite cooking appliance?

I’m not much of a kitchen gadget cook, but my food processor gets a sturdy workout regularly.

One thing you couldn’t live without?

My trusty hand whisk is definitely my number one!

How important is healthy eating to you?

It’s paramount. I have three children and teaching them the importance of fuelling their bodies and souls with nutritious food is key. I like to stay away from fad diets, food trends and novelty cooking. Believe it or not, kale is just for my bunny!

What do you love cooking at home?

I am an avid bread baker and haven’t bought bread for years now. It is the perfect side to any dish!

What do you whip up if time is tight?

It’s always a super simple pasta. I use tinned tomatoes to ensure a good quality tomato sauce with fresh basil. It’s a 15-minute meal, and cheaper and healthier than any takeout option.
