PRAWN TOAST

200g peeled green prawns, tails removed, roughly chopped

1 rindless bacon slice, roughly chopped

1 green onion, chopped

1 tbsp finely chopped coriander leaves

1 tsp grated ginger

1 garlic clove, crushed

6 slices wholemeal bread, crusts removed, quartered

¼ cup white sesame seeds vegetable oil, for shallow frying dipping sauces, to serve

1 In a food processor, combine prawns, bacon, green onion, coriander, ginger and garlic. Process until finely chopped.

2 Spread prawn mixture evenly on each piece bread. Place sesame seeds on a plate and dip bread, prawn-side down, into seeds to coat.

3 In a wok, heat oil on medium until a piece of bread sizzles when added. In batches, fry bread, prawn-side down, 30 secs until golden. Turn, fry 30 secs. Drain on paper towel.

4 Serve with dipping sauces of choice.
