THAI PORK RICE

SERVES 4 PREP 10 MINS COOK 20 MINS PER SERVE 2399kj

2 tsp vegetable oil

500g pork mince

80g tube Thai seasoning paste

2 x 250g packets microwave jasmine rice

1 carrot, coarsely grated

3 green onions, sliced diagonally

1/3 cup chopped coriander, plus extra leaves to serve

4 eggs, at room temperatur­e

¼ cup fried shallots

1 In a wok, heat half oil on high. Stir-fry mince 5 mins or until browned. Add seasoning and rice, stir-fry 5 mins or until heated.

2 Add carrot, onion and coriander, stir-fry 1 min or until combined and heated. Transfer to a large bowl and set aside bowls. Wipe wok clean.

3 In batches, fry eggs in remaining oil 2 mins or until cooked to your liking.

4 Serve rice with fried eggs, fried shallots and extra coriander.
