MACARONI WITH CABANOSSI & TOMATO

40g butter 2 tbsp plain flour 2 cups milk ½ cup grated tasty cheese 375g macaroni 1 tbsp olive oil 2 sticks cabanossi, sliced 250g punnet cherry tomatoes, quartered ¼ cup parsley leaves crusty bread, to serve
1 In a large saucepan, melt butter on medium. Stir in flour and cook, stirring, 1 min. Remove pan from heat and blend in milk until smooth. Return to heat and cook, stirring, until mixture boils and thickens. Simmer 3 mins. Stir in cheese and season to taste.
2 Meanwhile, in a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain well and return to pan. Stir through hot sauce.
3 In a frying pan, heat oil on high. Saute cabanossi 1-2 mins. Add tomatoes, cook 1 min to soften slightly. Transfer cabanossi and tomato mixture to macaroni. Toss through parsley. Serve with crusty bread.
