MACARONI WITH CABANOSSI & TOMATO

SERVES 4 PREP 10 MINS COOK 20 MINS PER SERVE 3346kj

40g but­ter 2 tbsp plain flour 2 cups milk ½ cup grated tasty cheese 375g macaroni 1 tbsp olive oil 2 sticks cabanossi, sliced 250g pun­net cherry toma­toes, quar­tered ¼ cup pars­ley leaves crusty bread, to serve

1 In a large saucepan, melt but­ter on medium. Stir in flour and cook, stir­ring, 1 min. Re­move pan from heat and blend in milk un­til smooth. Re­turn to heat and cook, stir­ring, un­til mix­ture boils and thick­ens. Sim­mer 3 mins. Stir in cheese and sea­son to taste.

2 Mean­while, in a large saucepan of boil­ing, salted wa­ter, cook pasta fol­low­ing packet in­struc­tions. Drain well and re­turn to pan. Stir through hot sauce.

3 In a fry­ing pan, heat oil on high. Saute cabanossi 1-2 mins. Add toma­toes, cook 1 min to soften slightly. Trans­fer cabanossi and tomato mix­ture to macaroni. Toss through pars­ley. Serve with crusty bread.
