TUNA & ZUC­CHINI PAT­TIES

SERVES 4 PREP 15 MINS + CHILL­ING COOK 35 MINS PER SERVE 2144kj

750g pota­toes, peeled, quar­tered 425g can tuna, drained, flaked 1 zuc­chini, grated 1 car­rot, grated ½ cup grated tasty cheese 2 tbsp chopped pars­ley 1 tbsp lemon juice 1 cup dried bread­crumbs 1 tbsp olive oil 200g green beans, trimmed, steamed lemon wedges, may­on­naise, to serve

1 Place pota­toes in a saucepan and cover with cold wa­ter. Bring to boil on high. Boil 15-20 mins un­til ten­der. Drain well and trans­fer to a large bowl. Roughly mash and cool.

2 Add tuna, zuc­chini, car­rot, cheese, pars­ley and juice. Sea­son to taste and mix well.

3 Line an oven tray with bak­ing pa­per. Di­vide mix­ture into 12 even pat­ties. Coat in bread­crumbs and ar­range on tray. Chill 20 mins.

4 In a large fry­ing pan, heat oil on medium. Cook pat­ties in 2 batches, 3-4 mins each side, un­til golden. Drain on pa­per towel.

5 Serve with steamed green beans. Ac­com­pany with lemon wedges and may­on­naise, if liked.
