TUNA & ZUCCHINI PATTIES
SERVES 4 PREP 15 MINS + CHILLING COOK 35 MINS PER SERVE 2144kj
750g potatoes, peeled, quartered 425g can tuna, drained, flaked 1 zucchini, grated 1 carrot, grated ½ cup grated tasty cheese 2 tbsp chopped parsley 1 tbsp lemon juice 1 cup dried breadcrumbs 1 tbsp olive oil 200g green beans, trimmed, steamed lemon wedges, mayonnaise, to serve
1 Place potatoes in a saucepan and cover with cold water. Bring to boil on high. Boil 15-20 mins until tender. Drain well and transfer to a large bowl. Roughly mash and cool.
2 Add tuna, zucchini, carrot, cheese, parsley and juice. Season to taste and mix well.
3 Line an oven tray with baking paper. Divide mixture into 12 even patties. Coat in breadcrumbs and arrange on tray. Chill 20 mins.
4 In a large frying pan, heat oil on medium. Cook patties in 2 batches, 3-4 mins each side, until golden. Drain on paper towel.
5 Serve with steamed green beans. Accompany with lemon wedges and mayonnaise, if liked.
