LEEK, BA­CON & EGG TARTS

MAKES 4 PREP 10 MINS COOK 25 MINS PER SERVE 1393kj

1 puff pas­try sheet, thawed 1 tbsp olive oil 1 leek, finely sliced 2 rash­ers rind­less ba­con, chopped 4 eggs ¼ cup grated tasty cheese salad, to serve

1 Pre­heat oven to hot, 200°C. Line an oven tray with bak­ing pa­per.

2 Cut pas­try into 4 even squares. Place on tray. Score a 1cm bor­der around each square. Bake 15 mins.

3 Mean­while, in a fry­ing pan, heat oil on medium. Saute leek and ba­con, 4-5 mins, un­til leek is ten­der and ba­con is golden. Re­move from heat.

4 Spread leek mix­ture evenly over each pas­try square. Us­ing the back of a spoon, make in­dents in cen­tre and break eggs into re­cesses. Top with cheese.

5 Bake 5-10 mins, un­til eggs are set. Serve with salad, if liked.
