BIRTH­DAY CAKE ICE-CREAM

SERVES 8 PREP 10 MINS + OVERNIGHT FREEZING

Place 2 litres vanilla ice-cream in a large bowl. Set aside 15 mins to soften slightly. Fold through 450g Madeira cake, bro­ken into large chunks, and ¼ cup rainbow sprin­kles (don’t over-mix). Re­turn to ice-cream con­tainer. Sprin­kle with ex­tra rainbow sprin­kles. Freeze overnight or un­til firm. Serve scoops of ice-cream in waf­fle cones.
