PANCETTA & FIG KU­MARA PIZZA

SERVES 4 PREP + COOK 55 MINS COST $$$$$

2 ku­mara (1kg) 2 tbsp ex­tra-vir­gin olive oil 100g pancetta, torn coarsely 60g gor­gonzola, crum­bled (see tip) 8 dried figs 1 1/3 cups grated moz­zarella

2/3 cup loosely packed basil 3 leaves

1 Pre­heat oven to hot, 220°C. Line two large oven trays with bak­ing pa­per.

2 Cut each ku­mara length­ways into four 1cm-thick slices. Place ku­mara on trays, driz­zle with oil and sea­son. Roast for 25 mins. Turn ku­mara over. Top with pancetta and gor­gonzola. Cut figs hor­i­zon­tally into three slices. Di­vide fig and moz­zarella be­tween piz­zas.

3 Roast piz­zas for a fur­ther 10 mins or un­til golden. Sprin­kle with basil and ex­tra gor­gonzola, if you like.
