PANCETTA & FIG KUMARA PIZZA

SERVES 4 PREP + COOK 55 MINS COST $$$$$

2 kumara (1kg) 2 tbsp extra-virgin olive oil 100g pancetta, torn coarsely 60g gorgonzola, crumbled (see tip) 8 dried figs 1 1/3 cups grated mozzarella

2/3 cup loosely packed basil 3 leaves

1 Preheat oven to hot, 220°C. Line two large oven trays with baking paper.

2 Cut each kumara lengthways into four 1cm-thick slices. Place kumara on trays, drizzle with oil and season. Roast for 25 mins. Turn kumara over. Top with pancetta and gorgonzola. Cut figs horizontal­ly into three slices. Divide fig and mozzarella between pizzas.

3 Roast pizzas for a further 10 mins or until golden. Sprinkle with basil and extra gorgonzola, if you like.
