RICH CHOCOLATE FUDGE ICE-CREAM SUNDAES

SERVES 4 PREP 10 MINS COOK 5 MINS

1 cup thickened cream ¾ cup condensed milk ½ cup dark brown sugar ¼ cup cocoa powder, sifted 200g dark chocolate, chopped 50g butter, chopped 8 scoops vanilla ice-cream wafers, sliced bananas, whipped cream, broken choc-chip cookies, crushed nuts, cherries, to serve 1 In a medium saucepan, combine cream, condensed milk, sugar and cocoa. Stir over low heat until sugar dissolves and mixture is smooth.

2 Increase heat to medium and bring cream mixture to a simmer. Cook gently 4-5 mins, stirring.

3 Remove from heat. Add chocolate and butter, stirring until melted and smooth.

4 Place 2 scoops ice-cream in each bowl or sundae glass. Top with wafers, bananas, whipped cream, cookies, sauce, nuts and cherries.
