CHOCOLATE SHERRY LOG
SERVES 10
2 cups thickened (whipping) cream ¹ / ³ cup icing sugar 1 tsp vanilla extract or vanilla essence 1-2 cups sweet sherry or any liqueur (Frangelico or kirsch is very nice) 250g pkt chocolate-flavoured biscuits (cookies) such as chocolate ripple ½ cup toasted flaked almonds
Whisk cream, icing sugar and vanilla in a medium mixing bowl until stiff peaks form. Pour sherry into a separate bowl, and have a serving plate ready – a long, rectangular one is ideal.
Begin by roughly spreading a line of cream along centre of serving plate – this is where log will form. Dip a biscuit in sherry, then spread about 1 tsp of cream on it. Repeat process, sandwiching biscuits together until platter is completely covered or biscuits have run out.
Spread more cream over entire surface of log. Cover log with flaked almonds. Then cover it with plastic wrap, and chill for a minimum of 5 hours or overnight before serving. Cut on a diagonal to serve.
