PROSCIUTTO PROSCIUTTO && CHEESC HEESE STUFFED CHICKEN SERVES 4 PREP 20 MINS + CHILLING COOK 30 MINS PER SERVE 2826kj

4 chicken breast fillets 4 thin slices prosciutto 4 slices Swiss cheese, halved 8 basil leaves ½ cup plain seasoned flour 1 egg, lightly beaten 1 ½ cup breadcrumb­s 40g butter 1 tbsp olive oil steamed vegetables of choice, to serve

1 Preheat oven to moderate 180°C. Line an oven tray with baking paper.

2 Place each fillet between 2 layers plastic wrap. Pound to an even 1cm thickness with a mallet or rolling pin.

3 Top one side of each chicken fillet with a slice of prosciutto, 2 cheese halves and 2 basil leaves. Roll up to enclose. Place seam side down on a tray. Repeat with remaining ingredient­s. Cover. Chill 15 mins.

4 Dust each chicken parcel in flour, shaking off excess. Dip in egg, then coat in breadcrumb­s. Chill 15 mins.

5 In a large frying pan, heat combined butter and oil on medium. Fry chicken 3-4 mins each side until golden all over. Transfer to tray and bake 10-15 mins until cooked through completely. Serve with steamed vegetables.
