CHILLI CON CARNE

SERVES 4 PREP 20 MINS COOK 15 MINS PER SERVE 1125kj COST $$$$$ ½ cup beef stock 1 red onion, finely chopped 2 garlic cloves, crushed 2 tsp ground cumin 2 tsp smoked paprika 1 tsp dried oregano pinch dried chilli flakes 250g lean beef mince 1 ½ cups passata 400g can four bean mix, rinsed, drained 250g cherry tomatoes, halved 1 yellow capsicum, seeded, chopped 2 tbsp chopped coriander, plus extra leaves to serve 1 tbsp lime juice ¼ cup no-fat natural yoghurt, to serve

1 In a frying pan, bring 1 tbsp stock to the boil on high. Saute onion and garlic 2-3 mins. Mix in spices and cook 1 min until fragrant.

2 Add mince and brown 3-4 mins, breaking up lumps. Stir in passata, remaining stock and beans. Simmer, uncovered, 10 mins. Add half cherry tomatoes and cook 2 mins.

3 Finely chop remaining tomatoes. In a bowl, toss chopped tomatoes, capsicum, coriander and lime juice together.

4 Serve chilli con carne sprinkled with extra coriander leaves. Accompany with salsa, yoghurt, and tortilla crisps, if liked.
