KOFTAS WITH TABOULI

SERVES 4 PREP 15 MINS COOK 20 MINS PER SERVE 1775kj COST $$$$$ 500g lamb mince ½ red onion, finely chopped 2 tbsp chopped parsley 2 tbsp chopped mint 1 egg 2 tsp ground cumin 2 garlic cloves, crushed 1 long red chilli, finely chopped ½ lemon, finely grated zest 1 tbsp olive oil TABOULI ½ cup couscous ½ cup boiling water 250g cherry tomatoes, thinly sliced ½ bunch parsley leaves ½ bunch mint leaves ½ red onion, chopped 2 tbsp olive oil juice ½ lemon

1 In a large bowl, combine lamb mince, onion, parsley, mint, egg, cumin, garlic, chilli and lemon. Roll into 8 small sausage shapes (about 10cm long). Mould around skewers and chill 10 mins.

2 TABOULI Combine couscous and boiling water in a bowl. Set aside, covered, 3 mins. Fluff up grains using a fork. Add tomato, parsley, mint leaves, onion, olive oil and juice. Toss well, season.

3 Heat oil in a large frying pan on high. Cook kebabs in two batches, 6-8 mins each, turning occasional­ly until cooked through. Serve with tabouli and flatbreads, if desired.
