CURRIED LAMB LASAGNE

SERVES 6-8 PREP 20 MINS COOK 1 ¼ HOURS COST $$$$$ 1 tbsp olive oil 1 onion, finely chopped 2 garlic cloves, crushed 500g lamb mince 3 tsp curry powder 400g can tomato puree 250g pkt instant lasagne sheets 200g baby spinach leaves (see tip) ½ cup grated tasty cheese WHITE SAUCE 90g butter ¹/ cup plain flour 3 4 cups milk

1 Preheat oven to moderate, 180°C. Grease an 8-cup baking dish.

2 In a frying pan, heat oil on high. Saute onion and garlic 2-3 mins until tender. Add mince and curry powder. Cook 4-5 mins, breaking up lumps with a spoon until browned. Mix in puree and cook, stirring, 3-4 mins. Season to taste.

3 WHITE SAUCE Melt butter in a saucepan on high. Add flour. Cook, stirring, 1 min. Remove from heat. Mix in milk until smooth. Return to heat. Cook, stirring, until sauce boils and thickens. Simmer 3 mins. Season to taste.

4 Place quarter lasagne in dish, trimming to fit. Spoon one-third white sauce and half spinach over. Cover with a layer of lasagne and half meat sauce. Repeat layers, finishing with remaining white sauce and cheese.

5 Bake 50-55 mins until golden.
