Zucchini + fetta folded fritter

2 zucchini, grated 1 tbsp fresh mint, chopped 1 tbsp fresh dill, chopped 2 eggs, lightly beaten 30g reduced-fat fetta olive oil spray

1 Place zucchini, mint, dill, eggs, fetta, salt and pepper into a bowl. Whisk to combine.

2 Heat a small, non-stick frying pan over a medium heat and spray with olive oil.

3 Add fritter mix to pan and cook for 3-5 mins on each side or until browned.

4 Fold in half. Fry until set and cooked through. Serve.
