CHOCOLATE SELF-SAUCING PUDDING

60g butter, softened ½ cup caster sugar 1 egg 1 tsp vanilla extract 1 cup self-raising flour 2 tbsp cocoa, plus ¼ cup extra ½ cup milk ½ cup brown sugar 1 ½ cups just boiled water double cream and raspberries, to serve (optional)
Preheat oven to moderate, 180°C. Lightly grease a 6-cup ovenproof dish. Place on an oven tray.
In a small bowl, using an electric mixer, beat butter and sugar together until creamy. Add egg and beat well. Beat in vanilla.
Using a large metal spoon, fold sifted combined flour and cocoa into creamed mixture, alternately with milk.
Spoon chocolate batter into dish. In a small bowl, combine brown sugar and extra cocoa. Sprinkle evenly over batter. Slowly pour just boiled water over chocolate mixture. Bake 35-40 mins until a skewer inserted into centre comes out clean. Serve straight away in scoops with double cream and berries, if liked.
